Surprise Filled Cookies
- 2 1/2 c. flour
- 1 c. salted butter, softened
- 1 c. sugar
- 2 tsp. vanilla extract
- 1 c. fruit jam
- 1/2 tsp. baking powder
- 1 large egg
- Combine flour and baking powder.
- Mix well and set aside. Cream butter and sugar very well.
- Add egg and vanilla and beat on medium speed until smooth.
- Add flour mixture and blend at low speed until thoroughly combined.
- Dough will be firm.
- Roll tablespoons of dough into 1-inch balls and place on ungreased baking sheet one-inch apart.
- Using small end of melon baller, scoop out the center of the dough balls.
- Do not scoop all the way through the cookies.
- Place 1/2 teaspoon of jam in the center of each dough ball.
- Bake at 300u0b0 for 22 to 24 minutes or until golden brown.
- Yields 4 dozen.
