Banana Butter Cake Recipe
- vegetarian
- 9 med bananas mashed
- 250 gm selfraising flour
- 2 x level tsp. baking powde
- 100 gm butter softened
- 200 gm caster sugar
- 2 x Large eggs
- Grease and line two 450g loaf tins with greased greaseproof paper.
- Measure all the ingredients into a bowl and beat till smooth.
- Spoon half of the mix into each tin.
- Stand the tins on the grill rack in the lowest position in the large roasting tin.
- Slide on to the lowest set of runners in the roasting oven with the cool plain shelf on the second set of runners.
- Bake for about 45 min turning halfway through if necessary till pale golden brown and a skewer comes out clean when inserted.

- Check half way through cooking.
- If the cakes are too brown slide in the cool plain shelf on the second set of runners.
- Cold in the tins before removing.
- Serve hot or possibly cool.
- This is an excellent way of using slightly over ripe bananas the ones which sit in the fruit bowl and everyone avoids!
- This mix makes two fairly shallow loaf cakes.
- It is very similar to butter almond cake but with the flavour of bananas instead o f almonds.
