Black Eyed Pea Salad Recipe
- 2 (10 ounce.) pkg. frzn black - eyed peas
- 1 c. bottled Italian salad dressing
- 2 teaspoon sugar
- 1/4 teaspoon crushed red pepper
- 1/2 c. sliced celery
- 1/2 c. minced green pepper
- 1/2 c. minced red bell pepper
- 1 bunch green onions, thinly sliced
- 1/4 c. minced parsley
- Cook peas as directed on package.
- Drain.
- Shake Italian dressing, sugar and crushed red pepper in tightly covered container.
- Combine cooked peas, dressing, celery, green pepper, red pepper, onions, parsley, salt and pepper to taste.
- Refrigerateand serve on lettuce.
- Yields 6 servings.
