BBQd Baba Ghanoush
- 1 Small Eggplant
- 1/2 Lemon, Juiced
- 1 Tablespoon Tahini
- 1/2 teaspoons Salt
- 1 clove Garlic, Finely Minced
- Cook eggplant on the BBQ grill until soft and charred.
- Let cool.
- Peel off skin, and put in a food processor with lemon juice, tahini, salt, and garlic.
- Process until smooth.
- Serve at room temperature or refrigerated.
- Great with pita bread!
