Country Dijon Baked Tomatoes

  1. In medium saucepan, cook potatoes until tender.
  2. Drain.
  3. Mash.
  4. Add egg, mustard, butter and heavy cream.
  5. Continue mashing until smooth.
  6. Slice tops from tomatoes.
  7. Scoop insides to form shell.
  8. Arrange in shallow baking pan.
  9. Fill with potato mixture.
  10. Sprinkle with crumbs.
  11. Bake in preheated 450 degrees F oven 8 to 10 minutes.
