Fruited S'mores Bars

  1. Preheat oven to 350F Line a 13x9-inch metal baking pan with parchment paper, leaving 2-inch overhang at each end.
  2. In a bowl, sitr together graham cracker crumbs and cinnamon.
  3. Drizzle with butter and stir until crumbs are moistened evenly.
  4. Spread into prepared pan and press down to form an even base.
  5. Bake for about 10 minutes or until puffed.
  6. Let cool completely.
  7. Meanwhile, in a medium bowl, whip cream until stiff peaks form.
  8. In a large bowl, beat cream cheese, sugar and vanilla until smooth and fluffy.
  9. Fold whipped cream into cream cheese mixture until combined.
  10. Add strawberries, marshmallows and 1/2 cup of the chocolate chips, and stir gently to distribute evenly.
  11. Spread over cooled base and smooth with spatula to even out.
  12. Cover and refrigerate for about 2 hours or until firm or for up to 2 days.
  13. Cut into bars.
  14. In a small microwave-safe bowl, microwave remaining chocolate chips on high power for 20-second intervals, stirring often, until melted.
  15. Drizzle over bars before serving.
