Black Bean and Mango Chicken Salad
- 1/2 lb. boneless skinless chicken breast, grilled, cut up
- 1 can (16 oz.) black beans, drained, rinsed
- 1 pkg. (10 oz.) frozen corn, thawed
- 1 cup chopped ripe mango Whole Foods 2 ea For $4.00 thru 02/09
- 1/2 cup chopped red pepper
- 1/3 cup chopped red onion
- 1/3 cup chopped cilantro
- 1/4 cup lime juice
- 1 env. GOOD SEASONS Italian Dressing Mix
- Mix all ingredients in large bowl; cover.
- Refrigerate several hours to allow flavors to blend.
- Serve with baked tortilla chips, if desired.
