Chicken & Dumpl'n Soup
- 6 cup chicken stock.
- 1 chopped onion.
- 1/2 chopped red pepper.
- 3 chopped celery stalks.
- 2 chopped garlic cloves.
- 3 carrots peeled & chopped.
- 5 potatoes peeled & chopped.
- 1 cup frozen green peas.
- 1 cup Orzo pasta.
- 4 sprigs of Fresh Thyme.
- 2 Bay leaves.
- 1 pinch Salt.
- 2 pinch Black pepper.
- 2 cup All-purpose flour.
- 1/2 cup Sugar.
- 1/2 cup Chopped parsley.
- pinch Salt & Pepper.
- 2/3 cup Water.
- 3 cup Chopped chicken.
- Bring chicken stock, celery, garlic, onion, bay leaves, thyme sprigs, red pepper and a pinch of black pepper to a boil.
- Then after it boils for about 15 minutes add your carrots & potatoes & chicken.
- Simmer for about 20 minutes.
- Then add your peas & orzo pasta.
- Simmer for another 10 minutes.
- In a bowl mix your flour, sugar, pinch of salt & pepper and half of your chopped parsley.
- Slowly add the water while mixing until a stiff dough appears.
- From your dough form small round balls and drop them into the simmering soup.
- Keep stiring so they do not stick to the bottom of your pot.
- Once all the dumpl'n are in the pot add the rest of your parsley, pepper and salt.
- Simmer for another 10 - 12 minutes.
- Stirring often.
