Cucumber Avocado Watercress Soup Recipe
- 2 bunches watercress
- 2 large ripe avocados, peeled and sliced
- 6 cucumbers, peeled and sliced
- 1/2 small red pepper (seeded and cut up)
- 1/2 small green pepper (seeded and cut up
- 1 tbsp. parsley, minced
- 2 tbsp. parsley, minced
- 1 c. lowfat sour cream
- Chicken broth
- Salt
- Freshly grnd pepper
- Sliced red radishes, garnish
- Rinse and trim watercress.
- Combine first 8 ingredients in a food processor with the steel blade in place.
- Process till pureed.
- Add in chicken broth if necessary to thin soup.
- Season with salt and pepper.
- Transfer to bowl and refrigeratewell.
- Garnish with sliced red radishes.
- Serves 6.
