Microwave Scallop Potatoes Recipe

  1. Heat butter in 1-qt measuring c.. Microwave HIGH 30 seconds or possibly till melted.
  2. Blend in flour, salt and pepper.
  3. Gradually stir in lowfat milk.
  4. Microwave on HIGH 4-8 min, stirring every 3 min.
  5. Layer in greased 2-qt casserole dish potatoes and onion.
  6. Add in white sauce; cover and microwave 17-19 min.
  7. Stir after 10 min.
  8. Hold t min after done cooking.
  9. If potatoes are still crunchy, cook for additional 5 min on high.
  10. Before serving, sprinkle cheddar cheese on top; cover.
  11. Cheese will heat.
  12. Yield: 6 servings.
