Baked Stuffed Squash
- 6 slices Bacon
- 6 whole Mini Squashes, Such As Sweet Lightning
- 1 whole Medium Onion
- 2 Tablespoons Butter
- 2 whole Apples, Peeled, Cored, And Diced
- 3 Tablespoons Honey
- 1 dash Salt And Pepper
- 1.
- Brown bacon, drain on a paper towel, and dice when cool.
- 2.
- Cut a small, circular opening on top of each squash and remove seeds.
- 3.
- Wash squash.
- 4.
- Saute onion in the butter until translucent.
- 5.
- Add diced apple and saute until apples are slightly tender.
- 6.
- Drizzle with honey and cook another minute before removing from heat.
- 7.
- Mix apple-onion mixture with bacon in a bowl.
- Season with salt and pepper to taste.
- 8.
- Stuff the squashes and replace the tops.
- Place in a 13 x 9 pan.
- 9.
- Pour about 3/4 cup water in bottom of pan and cover pan with tin foil.
- Bake 1 hour at 400 degrees or until done.
- You can remove the tin foil the last 15 minutes of baking.
