  2. onions, garlic till coloured
  3. Add the mussels and then add the white wine, place another pan on top to steam the mussels and reduce the alcohol
  4. Add the cream and reduce down again
  5. When reduced pour the mussels and sauce into a bowl with a squeeze of lemon and pinch of salt pep and chives
