Holiday Relish Recipe
- 1 c. water
- Sugar substitute = 1 c. sugar
- 2 c. fresh cranberries
- 1 c. minced pared apple
- 1 c. pineapple tidbits, liquid removed
- 1 tbsp. grated lemon peel
- 1/2 c. minced English walnuts
- Put water and cranberries in saucepan.
- Bring to a boil; cook till skins pop.
- Turn off heat; drain.
- Add in remaining ingredients.
- Stir to combine.
- Refrigerateprior to serving.
- Yield: 9 (1/2 c.) servings.
- Exchanges: 1/2 fruit and 1 fat.
- Calories: 65.
- 100 g = 5 cholesterol, 0 protein, 5 fat.
- Low sodium (3-4 gm Na) : OK. Low cholesterol: OK
