Homemade Granola

  1. In a large bowl combine oats, coconut, almonds and flax seed; set aside.
  2. In a saucepan combine brown sugar (I use a heaping 1/4 cup), oil (also a heaping 1/4 cup), honey (heap here too) and cinnamon, bring to a boil.
  3. Remove from heat and stir in vanilla.
  4. Pour sauce over oat mixture and stir until completely coated.
  5. Pour granola onto a greased cookie sheet and bake at 325F for 12-15 minutes.
  6. Cool and store in an airtight container or Ziploc bag.
  7. I like to eat this with vanilla yogurt and frozen blueberries.
  8. Enjoy!
