Tropical White Chocolate Cookies
- 34 cup butter, softened
- 34 cup brown sugar, firmly packed
- 34 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 12 cups sweetened flaked coconut
- 3 teaspoons grated lime rind
- 2 tablespoons fresh lime juice
- 2 12 cups all-purpose flour
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 (12 ounce) package white chocolate chips
- 12 cup chopped macadamia nuts
- Beat first 4 ingredients at medium speed with an electric mixer until creamy.
- Add eggs,beating until blended.
- Add coconut,lime rind,and lime juice,beating until blended.
- Combine flour,baking soda and salt in a mixing bowl;gradually add to butter mixture,beating well.
- Stir in white chocolate morsels and macadamia nuts.
- Drop by rounded tablespoonfuls onto ungreased baking sheets.
- Bake at 375 for 10-12 minutes or until lightly browned.
- Cool on wire racks.
