mushroom stroganoff
- 8 oz egg noodles
- 3 tbsp butter
- 1 large onion,quartered
- 3/4 lb portobella mushrooms,sliced
- 1 1/2 cup beef broth
- 8 oz sour cream
- 4 oz goat cheese
- 3 tbsp all- purpose flour
- 1/4 cup fresh,chopped parsley
- cook noodles as directed on box,drain, don't rinse
- in a large skillet,melt butter over med heat.
- add onion,and cook,stirring until softened.turn heat up to med- high,and add the mushrooms.
- cook until soft and browned.
- on low heat add your broth,sour cream, and goat cheese.
- simmer for 10- 15 min.
- season with salt n pepper to taste.
- add parsley right before serving.
- pour your sauce over the noodles,and stir until blended.
- Enjoy!
