Banana Cream Pie
- 2/3 c. sugar
- 2 Tbsp. cornstarch
- 1 Tbsp. flour
- 1/4 tsp. salt
- 2 1/4 c. milk
- 3 egg yolks, beaten
- 1 Tbsp. butter
- 1 tsp. vanilla
- 2 bananas
- 1 baked pie shell
- Combine 1/3 cup sugar, cornstarch, flour and salt in small bowl.
- Stir in 1/4 cup milk and egg yolks; set aside.
- Combine remaining 1/3 cup sugar and 2 cups milk in saucepan.
- Bring to a boil over high heat, stirring constantly.
- When mixture reaches full boil, remove from heat.
- Slowly stir 1 cup milk mixture into egg yolk mixture.
- Return all to saucepan.
- Bring to boil over moderate heat, stirring constantly.
- Boil 5 minutes, stirring constantly.
- Remove from heat.
- Stir in butter and vanilla.
- Let stand until cool.
- Slice 2 bananas; arrange in bottom of pie shell.
- Add filling.
- Garnish with sweetened whipped cream.
