Low-Fat Taco Supreme
- 1 lb. ground turkey breast
- 1 can (8 oz.) tomato sauce
- 1 pkg. taco seasoning
- 1 can fat free refried beans
- 12 corn tortilla shells, steamed
- Fat free cottage cheese
- sour cream
- 1 cup lettuce, shredded
- 2 lg. tomatoes, chopped
- 1 lg. onion, chopped
- Salsa
- In large nonstick skillet over high heat, cook turkey until done, place turkey in colander and rinse with hot water.
- Wash skillet and return turkey to nonstick skillet.
- Add tomato sauce and taco seasoning; cook until thickened.
- Meanwhile, in small nonstick saucepan over low heat, warm beans; stir occasionally.
- In each taco shell, put equal amounts of meat, beans, cottage cheese or sour cream, lettuce, tomato and onions.
- Top with salsa.
