Cucumber Mint Raita
- 2 large cucumbers, peeled,halved,seeded
- 12 large red onion, sliced thinly
- 12 cup plain nonfat yogurt
- 1 clove garlic, peeled,minced
- 2 tablespoons of fresh mint or 2 tablespoons fresh coriander, chopped
- cayenne or paprika, for garnish (optional)
- Slice cucumber halves into thin half-moons.
- Blot off moisture with paper towels.
- Put veggies in a bowl.
- Mix yogurt, garlic, and mint together and add to veggies.
- Toss to coat.
- Sprinkle with pepper, if desired.
- Chill before serving.
