Shrimp and Squash Fettuccine
- 1 cup diced butternut squash, peeled
- 2 tablespoons olive oil
- 12 shrimp, chopped small
- 1 cup madeira wine
- 8 ounces fettuccine pasta, cooked to box instructions
- 1 sprig fresh thyme
- Place oil in pan and saute squash over medium heat until nicely browned in a sauce pan, reduce Madeira by half (takes 5 about 5 min's).
- Add shrimp to saute pan, saute for 2 minutes, now add reduced Madeira, thyme and butter.
- toss in pasta and serve.
