Minestrone
- 1 chopped onion
- 2 cloves crushed garlic
- 3 slices chopped bacon
- 4 chopped tomatoes
- 3 tablespoons chopped parsley
- 2 14 liters beef stock
- 60 ml red wine
- 1 chopped carrot
- 2 chopped potatoes
- 3 tablespoons tomato puree
- 80 g peas
- 80 g pasta
- 2 tablespoons olive oil
- Heat oil and cook the onion, garlic and bacon until browned.
- Add tomato, parsley, stock and red wine.
- Simmer.
- Add carrot, potato, and tomato puree.
- Simmer.
- Add peas and pasta.
- Simmer until pasta and vegetables are tender.
- Season to taste.
