Wheat Germ Casserole Bread

  1. Combine 1 cup of the flour, the wheat ger, yeast and salt in a large bowl.
  2. Add very warm water (it should feel warm when dropped on wrist), butter and molasses.
  3. Beat 2 minutes at medium speed with electric mixer.
  4. Add 1/2 cup more flour and beat at high speed 2 minutes scraping down sides of bowl.
  5. With a wooden spoon, beat in enough additional flour to make a stiff batter.
  6. Cover bowl with clean towel and let rise in a warm place away from drafts for 45 minutes or until double in bulk.
  7. Punch dough down, beat for 30 seconds with wooden spoon.
  8. Place in a greased 1 1/2 quart casserole.
  9. Bake in a 375 degree oven for 40 minute or until bread sounds hollow when tapped.
  10. Remove from casserole.
  11. Serve warm or cool completely.
