Chicken Orange Pasta Salad

  1. Peel orange to remove all peel and white pith.
  2. Do this over a bowl to save juice.
  3. Cut between membranes to free orange sections.
  4. Mix pasta, chicken, orange sections, green onions, pineapple (I like lots) and any optional ingredients you would like.
  5. Thin mayonnaise with reserved orange juice or use pineapple juice.
  6. Do not use the juice from canned mandarin oranges because it is mostly water and has no flavor.
  7. Mix toasted almonds into the salad.
