green Soup

  1. Cook the barley in the stock for about 15 minutes.
  2. Add onion, celery, pepper and garlic and cook 15 minutes.
  3. Add potatoes and simmer till the potatoes are almost done (about 10-12 minutes).
  4. Add your greens and cook 5-7 minutes.
  5. You can mix whatever greens you like.
  6. If using artichokes, add when you add your greens.
  7. Taste and correct seasoning.
  8. You may need to add additional stock as you cook.
