Potato and Vegetable Curry

  1. Put first 8 ingredients into pan and saute.
  2. Add in more oil, water and potato.
  3. Fry, stirring often to coat potatoes with seasonings.
  4. When potatoes are almost tender, add last 4 ingredients.
  5. Cover and simmer until broccoliand carrots are tender.
  6. Serve with rice or pasta.
