Apricot Bran Honey Cakes

  1. Preheat oven to 400*F.
  2. Combine apricots, butter, nectar and honey in a small saucepan; place over high heat.
  3. Bring to boil, reduce heat and simmer 4 minutes or until apricots are plump.
  4. Remove from heat; cool.
  5. Gently spoon flour into dry measuring cups; level with knife.
  6. Mix flour, bran, baking soda, and salt in a medium bowl, stir well.
  7. Add sugar mixture to flour mixture, stirring just until combined.
  8. Lightly fold in apricot mixture.
  9. Spoon 1/2 cup batter into each of 7(6 ounce) ramekins coated with cooking spray.
  10. Place ramekins on a shallow baking sheet.
  11. Bake at 400*F. for 15 minutes or until golden brown.
  12. Put on wire rack.
  13. Serve warm or at room temperature.
  14. Enjoy!
