Whore Sauce (Salsa alla Puttanesca)
- 1 onion finely diced
- 2 cloves garlic finely sliced
- 2 anchovy fillets chopped
- 1 sm. red chili deseeded and finely chopped
- 2 tsp. capers rinsed and drained
- 1 handful olives deseeded and quartered
- 1 cup Red Sauce
- 1 tbsp. chopped fresh flat-leaf parsley
- Salt and pepper (B/c of the saliency of the capers, olives, and anchovies; use the salt sparingly)
- In a heavy sauce pot, saute the onion, garlic, anchovies, and the pepperino (red pepper) for 8 minutes till soft over a mediumish heat.
- Add in the capers and olives and saute for about 2 more minutes.
- Dump in the tomato sauce and simmer for about 8-15 minutes or somewhere it is the consistency that you would like.
- Check the seasoning for salt and pepper, add in the parsley and you got a one sinful sauce.
