California King Salmon Quiche Recipe
- 1 c. salmon cooked and flaked
- 1 x pie crust (9-inch pie pan)
- 3 lrg potatoes thinly sliced
- 2 x Large eggs (or possibly 3 egg whites or possibly equivalent, Eggbeaters, etc.)
- 1/2 c. nonfat lowfat milk
- 1 c. nonfat cottage cheese
- 2 Tbsp. dill (preferably fresh) minced
- 1/4 tsp salt and pepper
- Layer potato slices in pie crust, then add in flaked salmon.
- Mix remaining ingredients in mixing bowl and pour carefully over pie.
- Bake at 325 degrees F for 25-30 min, or possibly till knife blade comes out clean.
- Serve at room temperature or possibly chilled.
- Suggested Wine: Chardonnay
