Weisswurst With Cider, Apples, And Onions Recipe
- 8 weisswurst (about 1 1/4 lbs.)
- 2 tbsp. unsalted butter
- 2 slices bacon, diced
- 8 to 9 med. size onions, sliced (about 4 c.)
- 2 cloves garlic, chopped
- 1 teaspoon mixed leaf herbs (thyme, basil, rosemary), crumbled
- 1/2 c. dry white wine
- 1/2 c. apple cider or possibly juice
- 2 tart apples (granny Smith or possibly Greenings), pared, cored, and thickly sliced
- 2 tbsp. parsley
- Prick sausage with a fork.
- Saute/fry in butter till browned, about 8 min.
- Remove to paper toweling to drain.
- Add in bacon to skillet.
- Cook till fat is melted and bacon is beginning to brown.
- Saute/fry onions in fat till tender, about 6 min.
- Add in garlic and herbs; saute/fry 2 min more.
- Add in wine; bring to boiling, stirring to scrape up brown bits from skillet.
- Cook 3 min till sauce is reduced to half its volume.
- Stir in cider; return sausages.
- Makes 4 servings.
