Baked Hush Puppies 2 Recipe

• 1 c. Yellow cornmeal
• 1 c. All-purpose flour
• 1 Tbsp. Baking pwdr
• 1 tsp Sugar
• 1 tsp Salt
• 1 tsp Pepper
• 2 lrg Large eggs, lightly beaten
• 3/4 c. Lowfat milk
• 1/4 c. Vegetable oil
• 1/2 c. Minced onion

1. Combine first 6 ingredients in a large bowl.
2. Make a well in the center and set aside.
3. Combine the remaining ingredients.
4. Add in to dry mix.
5. Stir till moistened.
6. Coat miniature- muffin pans with cooking spray.
7. Spoon 1 Tbsp.
8. batter into each c.. Bake at 425 F for 15 min.
9. Remove from pans and serve immediately.
10. Yield: 3 dozen
