Monterey Club

  1. Preheat grill on medium-high heat.
  2. Grill chicken 6 minutes on each side or until cooked through (170F).
  3. Cut each piece crosswise into 4 slices.
  4. Meanwhile, sprinkle Monterey seasoning onto bacon.
  5. Bake in a 350F-convection oven for 8 to 10 minutes or until crisp; drain.
  6. For each serving: Spread each of 3 toast slices with 1 tsp.
  7. mayonnaise.
  8. Cover 1 of the toast slices with 2 chicken slices, 2 bacon slices, 1 tomato slice and 1 lettuce leaf; top with second toast slice.
  9. Repeat layers of chicken, bacon, tomato and lettuce; cover with remaining toast slice.
  10. Cut into quarters to serve.
  11. Serve immediately.
