Paleo Kiwi Tomato Salsa with Tilapia
- 1 large tomatoes freshly chopped
- 1 each kiwi fruit peeled and chopped into cubes
- 1 small red onion peeled and finely chopped
- 2 tablespoons parsley leaves freshly chopped
- 1/2 each lemon juice, freshly squeezed
- 1 x salt and black pepper to taste
- 1 pound fish
- In a medium bowl, gently toss tomato, kiwi, red onion, parsley, lemon juice, salt and black pepper to taste until well combined.
- Excellent served on top of grilled or pan-fried fish or chicken.
