Oatmeal raisins crispy cookies

  1. In a large bowl mix the butter, brown sugar, the egg yolk and the vanilla.
  2. In another bowl mix the flour, the baking powder and cinnamon together.
  3. Add to the 1st mixture
  4. Beat the egg whites until hard peaks and add to the mixture.
  5. Stir in 3/4 of the raisins.
  6. Pre-heat oven to 130C.
  7. Put it in the fridge for 30 minutes.
  8. Then make balls of the size of a teaspoon and flatten them.
  9. Put the rest of the raisins on top.
  10. Bake them until golden brown and let cool down before consuming.
