Cheese Beer Soup

  1. Cook carrots and onion in butter until tender.
  2. Add flour and blend in to make a smooth paste.
  3. Stir in milk, a bit at first and then all of it.
  4. Pour in beer.
  5. Cook, stirring over medium heat until liquid just comes to a boil and is thickened.
  6. Add cheese and seasonings, stirring until cheese is melted.
