Cheese Beer Soup
- 34 cup carrot, shredded
- 14 cup onion, chopped
- 14 cup butter
- 14 cup flour
- 2 12 cups milk
- 23 cup beer
- 8 ounces sharp cheddar cheese, shredded
- salt & pepper, to taste
- Cook carrots and onion in butter until tender.
- Add flour and blend in to make a smooth paste.
- Stir in milk, a bit at first and then all of it.
- Pour in beer.
- Cook, stirring over medium heat until liquid just comes to a boil and is thickened.
- Add cheese and seasonings, stirring until cheese is melted.
