Stacked Enchiladas
- 6 10 inch tortillas, halved
- 2 lb ground beef
- 2 can enchilada sauce
- 3 cup Mexican cheese blend
- 1 can black beans, drained
- 2 cup frozen corn
- 1 avocado, pitted and diced
- Preheat oven to 350AF.
- In a large skillet, cook ground beef over medium heat until no longer pink; drain fat.
- Spoon 1/3 of enchilada sauce in a casserole dish and spread across entire bottom.
- Place 2 tortillas on top of the sauce over lapping some.
- Add a layer of half the black beans, then half of corn, half beef, and a cup of cheese.
- Add another layer of tortillas, sauce, beans, corn, beef, and cheese.
- Top with a final layer of tortillas and sauce.
- Then cover with foil.
- Bake for 20 minutes and remove foil.
- Add final layer of cheese.
- Resume baking for another 10 minutes or until cheese is golden brown.
- Let sit for 10 minutes then add avocado on top and serve.
