Stacked Enchiladas

  1. Preheat oven to 350AF.
  2. In a large skillet, cook ground beef over medium heat until no longer pink; drain fat.
  3. Spoon 1/3 of enchilada sauce in a casserole dish and spread across entire bottom.
  4. Place 2 tortillas on top of the sauce over lapping some.
  5. Add a layer of half the black beans, then half of corn, half beef, and a cup of cheese.
  6. Add another layer of tortillas, sauce, beans, corn, beef, and cheese.
  7. Top with a final layer of tortillas and sauce.
  8. Then cover with foil.
  9. Bake for 20 minutes and remove foil.
  10. Add final layer of cheese.
  11. Resume baking for another 10 minutes or until cheese is golden brown.
  12. Let sit for 10 minutes then add avocado on top and serve.
