south beach diet...tuna pasta salad
- 8 oz whole wheat pasta
- 1/4 cup low fat mayonnaise
- 1/4 cup plain fat free or low fat yogurt
- 1 tbsp balsamic vinegar
- 1 tsp balsamic vinegar
- 2 can 6 oz. solid white tuna packed in water; drained
- 4 large celery stalks
- 6 oz cherry tomatoes -quartered
- 2/3 cup frozen peas...thawed
- 2 tbsp minced red onion
- 1 salt and freshly ground black pepper to taste
- cook pasta according to package directions until tender but still firm to the bite.
- Drain and rinse under cold water for 30 seconds.
- whisk together mayonnaise, yogurt, and vinegar in a small mixing bowl.
- season to taste w salt and pepper.
- place tuna in a large mixing bowl and break into small pieces.
- add pasta, celery, tomatoes, peas, and onion; stir to combine.
- Add dressing and stir to combine.
- Season to taste with salt and pepper and refrigerate until ready to serve.
