Loaded Potato Pancakes

  1. Mix potatoe, sour cream, eggs, and milk together in large bowl
  2. Stir in flour and baking powder.
  3. Blend together until almost smooth
  4. Add cheese and bacon.
  5. If desired, you can add chives too in this step.
  6. Heat cast iron skillet til water dances on surface.
  7. Pour enough cooking oil to cover surface, about 1/4 cup
  8. Pour 1/4 cup batter into skillet.
  9. Cook for two minutes, flip over with spatula.
  10. Cook for two to three minutes more.
  11. Or until golden.
  12. Serve with your favorite toppings and enjoy.
  13. Makes about 6 to 10 pancakes
