Fruit Yogurt Coffee Cake
- 2 cups buttermilk baking mix
- 14 cup sugar
- 2 tablespoons butter, softened
- 1 egg
- 34 cup fruit yogurt (about 6oz)
- 1 teaspoon vanilla
- 14 cup buttermilk baking mix
- 14 cup sugar
- 2 tablespoons butter
- 1 tablespoon grated lemon peel or 1 tablespoon orange peel
- Heat oven to 375F.
- Grease square 8 X 8 X 2-inch baking pan.
- Mix all ingredients except streusel; beat vigorously for 1 minute.
- Spread patter in pan; sprinkle with streusel.
- Bake until wooden pick inserted in center comes out clean, 30 to 35 minutes.
- Cool 10 minutes; cut into squares.
