Low Fat Bran Muffins
- 2 cups boiling water
- 2 cups all-bran cereal
- 1 12 cups sugar
- 1 cup oil
- 1 egg
- 3 egg whites
- 1 quart buttermilk
- 5 cups all-purpose flour
- 4 cups bran flakes or 4 cups Raisin Bran cereal
- 5 teaspoons baking soda
- 2 teaspoons salt
- dates, raisins, chopped prunes, apples (optional)
- Preheat oven to 400.
- Pour boiling water over whole bran cereal and let stand.
- Mix sugar with oil, beat in eggs and buttermilk, and add bran mixture.
- Combine flour, bran flakes or Raisin Bran, baking soda, and salt.
- Stir into liquid mixture.
- Bake 20 minutes.
