Baked Parsnips

  1. Pre-heat oven to 375F (or whichever temperature you need to cook your meat).
  2. Peel parsnips, quarter, and remove any woody core.
  3. Parboil for 15 minutes.
  4. Place in an ovenproof dish.
  5. Add stock and sprinkle with salt, pepper and nutmeg.
  6. Dot with butter and bake for 30 minutes on a low shelf in a moderate oven.
