Creamy Pasta with Cheese
- 2 tablespoons butter
- 1 cup low-fat ricotta
- 12 cup low-fat yogurt
- 1 cup parmesan cheese
- pepper, to taste
- 12 linguine
- Bring a pot of water to boil, salt lightly and cook pasta till al dente.
- Drain.
- Return to pot, add butter and toss over low heat till butter is melted and coats pasta.
- Stir ricotta and yogurt in and gradually add parmesan, stirring continuously until sauce is warm and cheese melts.
- Sprinkle with pepper.
