Panko and Parmesan Crusted Tilapia

  1. Preheat oven to 500 degrees F.
  2. Prepare a baking sheet by lining it with foil and spraying with olive oil Pam or other olive oil cooking spray.
  3. In a pie plate, beat the egg and milk together.
  4. In a separate pie plate, mix the bread crumbs, seasonings and parmesan together.
  5. Dip one fish fillet at a time into the egg mixture to coat and then coat with Panko mixture.
  6. Be sure to press the crumbs onto the fish to make sure it is well coated.
  7. Place each piece of fish on the prepared baking sheet.
  8. When all pieces of fish are coated, spray lightly with olive oil cooking spray.
  9. Bake for 10-12 minutes or until fish flakes easily with fork.
