Satay Pork Rice
- 1 tablespoon oil
- 1 medium onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 500g minced pork Safeway 1 lb For $1.99 thru 02/09
- 2 teaspoon curry powder
- 1 1/2 cup long grain white rice
- 2 cups (500ml) chicken stock
- 1 1/2 cups water
- 1 cup (250ml) coconut milk
- 1/4 cup KRAFT* Super Crunchy Peanut Butter / KRAFT* Crunchy Peanut Butter
- 425g can baby corn cuts, drained
- 1 red capsicum, sliced
- 100g snow peas, sliced
- 1/4 cup sweet chilli sauce
- 3 spring onions, finely chopped, to serve
- Heat the oil in a large saucepan.
- Add onion, pork mince and curry powder and cook over medium-high heat for 5 - 8 minutes or until pork is browned.
- Add uncooked rice, stir until well combine .
- Stir in stock, water, coconut milk, and peanut butter, cover and simmer for 15 minutes, stirring occasionally, until rice is just tender.
- Stir in vegetables and chilli sauce, cover and simmer a further 5 -10 minutes or until the vegetables and rice are cooked through.
- Top with spring onions.
