Satay Pork Rice

  1. Heat the oil in a large saucepan.
  2. Add onion, pork mince and curry powder and cook over medium-high heat for 5 - 8 minutes or until pork is browned.
  3. Add uncooked rice, stir until well combine .
  4. Stir in stock, water, coconut milk, and peanut butter, cover and simmer for 15 minutes, stirring occasionally, until rice is just tender.
  5. Stir in vegetables and chilli sauce, cover and simmer a further 5 -10 minutes or until the vegetables and rice are cooked through.
  6. Top with spring onions.
