Chilled Shrimp & Cucumber Soup
- 3 cucumbers, peeled & seeded
- 1 small onion, coarsely chopped
- 12 bunch celery, trimmed, peeled & coarsely chopped
- 12 lb frozen popcorn shrimp, thawed
- 2 tablespoons butter
- 12 teaspoon cajun seasoning
- 12 teaspoon dill weed
- 2 tablespoons butter, melted
- 2 tablespoons flour
- 4 cups half-and-half
- Puree cucumbers, onion & celery individually in the bowl of a food processor.
- Combine all in a mixing bowl & set aside.
- Melt butter in stockpot.
- Add shrimp & stir to coat.
- Season with Cajun spice & dill weed.
- Whisk melted butter & flour together.
- Stir mixture into shrimp & cook over low heat for 1 minute.
- Slowly add half & half, stirring constantly.
- Add pureed mix & simmer over low heat for 20 minutes, stirring occasionally.
- Remove from heat & chill completely before serving.
