Italian Pizzelles

  1. Beat eggs in bowl on high speed until thick and lemon-colored.
  2. Beat on medium speed, gradually adding sugar, until well mixed.
  3. Add all remaining ingredients; continue beating until smooth.
  4. Heat electric pizzelle iron according to manufacturers directions.
  5. Place rounded tablespoonful batter in center of heated pizzelle iron; close lid.
  6. Bake 1-3 minutes or until evenly browned on both sides.
  7. Open iron; lift pizzelle off with thin spatula.
  8. Cool completely.
  9. Repeat with remaining batter.
  10. Store in loosely covered container.
