Savory Galette
- 2 whole Medium Yellow Onions, Thinly Sliced
- 2 whole Refrigerated Pie Crusts
- 1 whole Bosc Pear, Cored And Thinly Sliced
- 13 cups Blue Cheese Crumbles
- 13 cups Walnut Pieces
- 8 slices Prosciutto - Roughly Torn
- 1 whole Egg
- Preheat oven to 415 F.
- In a large skillet over low heat, add the onion slices.
- Toss them occasionally, caramelizing them until theyre sugary and brown and sweet and you want to freak out.
- This will take about an hour.
- Roll out your pie crusts on parchment paper lined rimmed baking sheets.
- Evenly arrange half of the onions in the center of each rolled out pie crust.
- Top each with half of the sliced pears (fanned out), blue cheese, walnut pieces and the prosciutto strips.
- Fold the outer two inches of dough in towards the center of the the galette, kind of overlapping.
- In a small bowl, lightly beat the egg.
- Brush the egg wash over the outer crust, and bake the galettes for about 30 minutes.
- Slice and serve!
- * Garnish with fresh rosemary if desired.
