Sweet Potato and Bacon Bake
- 1kg sweet potatoes, cut into 1.5cm slices
- 125g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup sour cream
- 1/4 cup milk
- 2 long rashers bacon, chopped and fried until crisp
- 8 spring onions, finely sliced
- 2 teaspoons maple syrup, optional
- salt and pepper to taste
- 50g plain bagel chips
- Steam or microwave sweet potato into tender, drain.
- Place into a 27cm x 20cm lightly greased baking dish.
- Mix Philly*, sour cream and milk until smooth.
- Stir through bacon, spring onions and maple syrup, season to taste.
- Spread the Philly* mixture evenly over the hot potatoes.
- Top with bagel chips.
- Bake at 180C for 20 minutes or until Philly* and bagel chips have browned.
- Serve immediately.
