Microwave Beet, Potato and Feta Cheese soup
- 1 cup beets cubed, canned wiith liquid
- 1/2 cup beet juice
- 3/4 cup tomato juice can use clamato juice
- 3/4 cup beef stock
- 1 cup potatoes leftover boiled (in cubes)
- 5 cloves garlic
- 1 x onions chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon black peppercorns
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon celery salt
- 3/4 cup sour cream
- 3/4 cup cream
- 3 tablespoons dill weed, fresh add before heating
- 1/2 cup feta cheese Add after heating and stir
- Add all ingredients to food processor and mix until you reach the consistency you like.
- Heat in micro wave for 7 to 10 minutes.
- Add warm or room temperature cream and feta.
- Mix with spoon.
- Add to bowls.
- Top with sour cream or plain yogurt.
- Sprinkle with fresh dill and/or feta.
- Enjoy!
