Carrot Raisin Salad

  1. In a small skillet, toast walnuts over medium heat -- about 3 minutes, stirring often.
  2. Cool.
  3. In a medium bowl, whisk together orange juice, oil, honey, and salt.
  4. Stir in walnuts, raisins, and carrots.
  5. Refrigerate until ready to serve.
