Carrot Raisin Salad
- 23 cup chopped walnuts
- 34 cup orange juice
- 14 cup vegetable oil
- 1 tablespoon honey
- 14 teaspoon salt
- 34 cup seedless raisin
- 1 12 lbs carrots, grated
- In a small skillet, toast walnuts over medium heat -- about 3 minutes, stirring often.
- Cool.
- In a medium bowl, whisk together orange juice, oil, honey, and salt.
- Stir in walnuts, raisins, and carrots.
- Refrigerate until ready to serve.
