Apricot Balls

  1. Put apricots, orange juice and citric acid into a saucepan.
  2. Cover and bring to the boil.
  3. Reduce heat and simmer for 10 minutes.
  4. Leave to cool.
  5. Puree apricot mixture in a food processor or blender.
  6. Transfer to a bowl.
  7. Add icing sugar, coconut and biscuit crumbs.
  8. Mix well.
  9. Measure tablespoons of mixture and roll into balls.
  10. Dip in melted chocolate.
  11. Chill until set.
